Crisp Waffles

Single batch:
2 eggs
2 C milk
½ C veg oil
2 C flour
1/2 t salt
4 t baking powder
1 T sugar

Heat iron. Blend wet ingredients in blender, then pour the batter into a bowl. Stir in remaining ingredients until just smooth.  Put about 1 cup batter on large heated waffle iron, and cook according to iron instructions.

Susan's Secret Ingredients:

1 small batch of cooked oatmeal (or cold leftover oatmeal) with the wet ingredients (MY FAV - I don't make waffles without this!) or 3 tbsp corn meal,  or zucchini & cinnamon,  or other variations...

Double batch:
3 eggs
3 C milk
3/4 C veg oil
3 C flour
3/4 t salt
4 1/2 t sugar
2 T baking powder

Triple batch:
4 eggs
4 C milk
1 C veg oil
4 C flour
1 t salt
8 t baking powder
2 T sugar
